Sweetcorn Fritter Recipe.
makes around 20 fritters
Ingredients:
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tin creamed sweetcorn
1 egg (beaten)
1/4 tsp paprika
50g grated cheese
Sweetcorn Fritter Recipe – Method
Pack about 10 – 12 briquettes onto the coal grid inside your PotjieKing™ . Place a couple of fire lighters in the bottom section and get that going. Once the briquettes have stopped smoking, place your double sided cast iron griddle onto the PotjieKing™ (skottel side up) to heat up. To test if the skottel is hot enough drop a drop of water onto it. If it ‘dances’ across the surface it is hot enough.
- Combine the sweetcorn, egg, salt, and grated cheese.
- Sift flour, baking powder, and paprika into the mixture and stir until mixed in.
- Coat the skottel with a little oil.
- Use 1 tablespoon of the mixture per fritter.
- Fry until golden brown on both sides. You can fit about 6 fritters on the skottel at a time.
