02/05/2019Sweet Potato Flat Bread
Great texture and a super way to sneak in more veggies!
A fantastic side dish to serve with any braai or potjie.
Ingredients:
300g sweet potatoes
800g all-purpose flour
10g instant yeast
250ml lukewarm water
1 tsp salt
1 tsp fresh chopped chives or garlic chives
butter
minced fresh garlic or dried garlic flakes
Method
- Wrap the sweet potato in tin foil and cook until tender – either in the oven or in your PotjieKing underneath the dome lid. If you happen to be making a Potjie just pop them into the bottom compartment of the PotjieKing.
- Allow the sweet potato to cool completely, remove the skin and mash until smooth.
- Pour the yeast and salt into the warm water and allow to stand for at least 10 min.
- Put the flour in a large bowl and make a well in the middle.
- Mix the sweet potato and warm water together and pour into the well in the flour.
- Stir until the sweet potato/water mix is absorbed then knead until you have an even consistency and it no longer sticks to your hands. If its a bit sticky add a sprinkle of flour.
- Cover the bowl with a damp cloth or cling wrap.
- Allow to rise somewhere warm (in a car parked in the sun is a great place if you are out and about and it’s cold) for half an hour or so, or until doubled in size.
- Cut or tear the dough into 6 pieces and allow to rest for 15 min or so.
- Flatten the dough with your palms until round-ish and about 1/2 cm thick.
Pack 10 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going. When you are ready, place your double sided griddle plate on to your PotjieKing to heat up (Skottle side up)
- Wipe a bit of oil over the skottle side using a piece of kitchen paper/serviette
- Place your flattened dough onto the skottle and allow to cook for about 12 – 15 min on each side.
- Spread with butter and sprinkle with a bit of salt, chopped chives/garlic chives and garlic
- Best served while warm
