Port & Mutton Potjie Recipe.
Ingredients for your Potjie Recipe:
100g Butter
30ml Cooking oil
5 Carrots chopped chunky
1 Large onion, sliced
3 tsp Crushed Garlic
2 Bay leaves
4 tsp Fresh chopped Thyme
Shoulder of mutton, cubed
200g Streaky bacon, sliced
200ml Port of your choice
150ml Stock of your choice
Salt and pepper to taste
4 Large potatoes, sliced
Port & Mutton Potjie Recipe – Method
Pack one layer of briquettes onto the coal grid inside your PotjieKing™ and place a couple fire lighters in the bottom section and get that going. Once the briquettes have stopped smoking, place your Potjie pot onto the PotjieKing™ to heat up.
- Heat the oil in a number 3 potjie pot and sauté the carrots, onions, and garlic for about 5 minutes.
- Add the herbs, meat, bacon, port and stock then simmer, covered, for 3 hours.
- If needed place a few additional briquettes in the PotjieKing.
- Place the potatoes on the top of the meat and simmer for a further hour (or until potatoes are soft).
- Serve with pot bread, mash, rice or pap.
