30/05/2019Ham & Cheesy Corn Chowder
Simple, quick, hearty and delicious! What more could you want on a chilly day?
Ingredients:
30 ml oil
125g streaky bacon
1 large onion chopped
3 tbsp flour
3 cups milk
1 & 1/2 cup hot water
2 & 1/2 cups potato (cubed)
1 tin whole kernel corn (drained)
1 chicken stock cube
2 cups grated cheddar
2 cups sliced cooked ham
Method
Pack 12 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going. Place your no 3 round bottom potjie pot on to the potjieking to heat up
- Add in the oil and allow to heat up
- Fry the bacon until well cooked and crispy
- Remove and allow to cool before cutting into small bits
- Saute the onions until tender
- Mix the stock cube with the hot water and allow to dissolve
- Sprinkle the flour over and stir to coat the onions
- Slowly add the stock while stirring
- Then add the milk
- Bring to the boil for a couple of minutes and allow to thicken
- Add in the potatoes and corn
- Cook until the potato is tender then stir in the ham and cheese
- Once the cheese is melted stir in the bits of bacon (keeping a bit to the side for garnish)
- Serve with fresh bread and butter.
