18/04/2019Coriander, Cumin and Orange Glazed Chicken
There wasn’t a single shred of chicken left.
I’m surprised no serious injuries were caused over the last scraps!
Ingredients:
1.6kg whole chicken
Marinade:
juice of 2 oranges
1 tsp orange zest
1/2 tsp ground coriander
1/2 tsp cumin
1/ 2 tsp salt
30ml veg oil
Glaze:
juice of 2 oranges
1/4 tsp English mustard powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp dried coriander
1/4 cup white sugar
Method
- Mix the marinade ingredients together.
- Place chicken and marinade mix in a sealable container overnight. Shake it up every now and again
- Add the glaze ingredients into a pot and heat until it begins to boil. You can make the glaze beforehand and store in the fridge.
- Allow the glaze mixture to simmer until it has reduced and turned a golden brown. Approx 20 min
Pack 12 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going.
- When the briquettes are ready, place the marinated chicken onto the braai grid (breast side up) and cover with your Dome Lid.
- Keep both doors of your PotjieKing closed and the vents on the dome lid closed while cooking.
- Turn after 45 min.
- After 35 minutes coat the chicken in the glaze and allow to cook for a further 10 min,
- Remove and allow to rest for 10 min.
- Carve and serve!
