Coffee and Chocolate Steak Marinade Recipe
Ingredients for your Marinade Recipe:
250ml hot strong coffee
20g dark chocolate (85% cocoa or up)
1 tablespoon treacle sugar
1 1/2 teaspoons ground sea salt
1/4 teaspoon crushed chilli (optional)
900g – 1.2 kg steak (we used rib-eye)
Coffee and Chocolate Steak Recipe – Method
- Finely chop the chocolate.
- Mix the Coffee, chocolate, sugar, sea salt and chilli in a bowl and stir until the chocolate and salt have dissolved.
- Allow to cool.
- Pack the steaks into a zip lock bag and pour in the marinade.
- Squeeze out the air and seal the bag. If you don’t have a ziplock bag then a sealable tub/dish will do. Just make sure to turn the steaks occasionally to ensure they are well marinaded on both sides
- Leave to marinate overnight.
Pack a layer of briquettes onto the coal grid inside your PotjieKing™ and place a couple firelighters in the bottom section and get that going. Once the briquettes have turned grey / whitish, place the griddle plate on to the PotjieKing to heat up. Using a piece of kitchen towel, rub some oil over the griddle plate before placing your steaks on to it. Cook your steaks until they are done how you like them. For a bit of extra flavour I like to brush my steaks with a bit of butter for the last few minutes of cooking time, alternatively, you can place a knob of butter on each steak while it rests before serving.
