Use yesterdays braaied boerie or sausages for this one pot breakfast hit! Prep the potjie the night before and ease into Sunday with a smashing breakfast.
Ingredients:
500g pork sausage/boerewors
5 slices bread
1 cup grated cheese
6 eggs
2 cups milk
2 tsp mustard powder
salt and pepper
Method
Precook the boerewors/sausage the day before – leftovers from the braai the night before are perfect
I lined our no 10 flat bottom Best Duty potjie with heavy duty foil and greased the foil with a little bit of butter
- Tear the bread into chunks and layer it into the potjie
- Slice the sausage up and layer it over the bread
- Sprinkle the grated cheese over the sausage
- Mix the eggs, mustard powder and, milk together.
- Add salt and pepper to taste
- Pour the mix over the top of the cheese
- Allow to rest in the fridge for a couple of hours – or even overnight if you want to prep it for the next morning.
Pack 12 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going. Once the briquettes are going, take 6 out and place them on the potjie pot lid. Then place your no 10 flat bottom potjie onto your PotjieKing. Without the braai grid on it nestles perfectly inside the PotjieKing.
Cook for 40 – 45 min.
