Ingredients for your Blerrie Lekker Brisket Recipe:
1 Tbsp liquid smoke
1 Tbsp crushed garlic (or less, we like lots)
1 large onion chopped finely
2 Tbsp apple cider vinegar
1 Tbsp brown sugar
3 Tbsp fresh squeezed lemon juice
20 – 100g. Tomato Sauce (depends on how you like it!)
1/2 Tsp chili powder (or give it a miss if you don’t like spicy stuff)
4 Tbsp Worcestershire sauce
1 Tbsp dry mustard powder
1 cup water or red wine
1 tsp salt
1/8 Tsp black pepper
1 Tbsp honey
1.5kg Beef Brisket
Blerrie Lekker Brisket Recipe – Method
We suggest starting your PotjieKing with 6 – 8 briquettes to get a nice low heat. You can add some more in later if needed. The ideal cooking temp for Low and Slow cooking is 110 degrees Celsius so try to keep it around there to ensure your Brisket is perfectly tender in the end. Patience really pays off with this dish.
Place the briquettes onto the coal grid inside your PotjieKing™, put a couple fire lighters in the bottom section and light them. Use the hand tool to push them back into the middle of the PotjieKing. Once the briquettes have stopped smoking, place your potjie pot onto the PotjieKing™ to heat up.
- Mix together the ingredients for the Blerrie Lekker sauce and chuck them in the potjie pot. Let this cook for 20 minutes or so to get the flavors going.
- Prep the brisket by removing all silver skin if the butcher didn’t already do this.
- Place the Brisket in the potjie pot and cover with the Blerrie Lekker sauce and let it cook nice and slow.
- The length of cooking time will depend on how large a brisket you have got. We suggest cooking for 2 ½ hours minimum for 1.5kg but the longer the better!
- If you feel your sauce is getting a bit thick you can always add a little splash of water or wine.
- When your Brisket is ready, take the pot off the PotjieKing and shred the brisket using 2 forks and mix it into the sauce.
- Blerrie Lekker Brisket is finger licking good on a bun, in a taco or wrap with all the trimmings, creamy mash, or rice.
