Bacon, Camembert & Onion Marmalade Braai Pie – Method
Pack 10 briquettes onto the coal grid inside your PotjieKing. Place a couple of firelighters in the bottom section and get that going.
- Cut the bacon into bits and fry until cooked.
- Unroll both of the rolls of puff pastry. Measure 2 circles of approx 26cm in diameter and cut them out.
- Lay one circle down in your ‘closeable’ braai grid and spread the onion marmalade over the pastry. Leave about 1cm around the edge free of any topping so that you can use that edge to seal the pie when you’re done filling it.
- Spread the bacon evenly over the marmalade.
- Slice the wheel of camembert into 1/2 cm slices and spread that over the bacon.
- Place the 2nd pastry circle over the top and pinch the edge closed. Roll the edge over and press it with a fork to make sure it’s nicely sealed. If there are gaps the camembert will make a run for it when it melts!
- Brush the top with melted butter, close the grid and turn it over to coat the other side. If you don’t have a basting brush on hand a lettuce leaf works really well.
- Place the braai pie on the PotjieKing and turn regularly to prevent the pastry from burning.
- It should take about 15 to 20 minutes to cook properly.
Serve with a fresh salad and enjoy!
